Lime and clay soils, poor in nutrients and formed with loose pebbles, which afford good drainage.

Vineyard age: from 30 to 35 years old, located in Pozoamargo (Cuenca).

The vineyard is worked in a traditional viticulture, practically organic and with low yield per plant, approximately 15 Hl/ha. The wine is elaborated with excellent raw material, using only the best, healthy, ripe and balanced grapes.

Each area is harvested when each variety reaches its optimum state of ripeness.

Cold maceration for 4 days at 12ºC to extract the aromas.

Fermentation at 25ºC in stainless steel tanks with autochthonous yeast, respecting the typicality of the raw material.

Spontaneous malolactic fermentation in stainless steel tanks.

Fatum is a fun, pleasant, fresh, delicate, easy to drink wine, a wine to enjoy, made from high quality grapes and great respect for raw materials, keeping the typicality of the autochthonous varieties, Tempranillo and Bobal.

A great wine with an unbeatable price/quality ratio.

Limestone and clay soil in Airén and Sauvignon Blanc and pebbly soil in Macabeo, all vineyards are located in Pozoamargo and Sisante (Cuenca)

The vineyard is worked in a traditional viticulture, practically organic and with low yield per plant, approximately 25 Hl/ha. The wine is elaborated with excellent raw material, using only the best, healthy and balanced grapes and seeking a good acidity.

Grapes harvested in September. Each area is harvested when each grape variety reaches its optimum state of ripeness.

Cold film maceration for 12 hours to extract the aromas. Fermentation at 16ºC in stainless steel tanks with autochthonous yeast, respecting the typicality of the raw material.

Aged for 4 months in stainless steel tanks with fine lees.

Fatum is a pleasant and funny wine, lush, fresh and well balanced between alcohol grade and acidity, a wine to enjoy, elaborated from high quality grapes and great respect for raw materials, keeping the typicality of the autochthonous  Airen variety, especially on the palate, and complemented with the elegance and richness from Sauvignon and the noticeable character of Macabeo.
